Ingredients
  

Scones Dough

  • 2 cups all-purpose flour (250 g)
  • 1/3 cup granulated sugar (66 g)
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 cup unsalted butter very cold or frozen (113 g)
  • 1/2 cup sourdough starter discard (110 g)
  • 1/4 cup heavy cream (60 ml)
  • 1/2 tsp vanilla extract
  • 3 oz chopped semisweet chocolate or 1/2 cup chocolate chips (optional)

Instructions
 

  • Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  • In a large bowl, mix the flour, sugar, baking powder, and salt.
  • Grate the cold butter into the dry ingredients using a box grater, or cut it in using a pastry blender.
  • Add the sourdough discard, heavy cream, and vanilla extract. Mix gently until combined.
  • Shape the dough into a round disc about 1-inch thick. Fold in half and press down gently. Repeat 2-3 times for flaky layers.
  • Cut into 8 wedges using a sharp knife. Place on the prepared baking sheet.
  • Chill the scones in the refrigerator for at least 30 minutes before baking.
  • Bake for 15-18 minutes, or until golden brown.
  • Let cool on a wire rack before serving.

Notes

For best results, use very cold or frozen butter to create flaky scones. You can add different mix-ins such as nuts, dried fruit, or different chocolate flavors.
