Ingredients
  

Main Ingredients

  • 2 chicken breasts boneless, skinless, sliced
  • 8 oz pasta fettuccine, penne, linguine, or rigatoni
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 1/2 onion chopped
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • to taste salt & pepper
  • 1 tbsp olive oil
  • 1 tbsp butter

Instructions
 

  • Season the chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a skillet and cook the chicken until golden brown on both sides. Remove and set aside.
  • Cook pasta in salted boiling water until al dente. Drain and set aside.
  • In the same skillet, sauté garlic and onion in butter until fragrant.
  • Add sun-dried tomatoes and cook for a minute.
  • Pour in chicken broth and heavy cream, then bring to a simmer.
  • Stir in Parmesan cheese until melted and smooth.
  • Add the cooked chicken back into the skillet and let it simmer in the sauce for a few minutes.
  • Toss in the cooked pasta and mix well to coat evenly in the sauce.
  • Serve hot with additional Parmesan cheese and fresh herbs if desired.

Notes

For a dairy-free version, substitute heavy cream with coconut cream and use a dairy-free Parmesan alternative. For a gluten-free option, use gluten-free pasta.
