Ingredients
  

Dough

  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 tsp instant yeast
  • 1/2 cup warm water adjust as needed

Baking Soda Bath

  • 6 cups water
  • 1/4 cup baking soda

Toppings

  • coarse salt for sprinkling

Instructions
 

  • In a large bowl, mix sourdough discard, flour, salt, sugar, yeast, and warm water until a soft dough forms.
  • Knead the dough for 5 minutes on a floured surface until smooth. Cover and let rest for 10 minutes.
  • Divide the dough into small pieces and roll into bite-sized balls. Set aside.
  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Bring 6 cups of water to a boil in a pot and add the baking soda.
  • Drop the pretzel bites into the boiling water for 20-30 seconds, then remove with a slotted spoon and place on the baking sheet.
  • Sprinkle the pretzel bites with coarse salt and bake for 12-15 minutes, or until golden brown.
  • Serve warm with dipping sauces like mustard or cheese, and enjoy!

Notes

If the dough feels too dry, add a tablespoon of water at a time until the right consistency is achieved. For a sweet variation, sprinkle the pretzel bites with cinnamon sugar instead of coarse salt before baking. These pretzel bites freeze well! Reheat in the oven at 350°F (175°C) for 5-7 minutes.
