Sourdough Pasta Dough

  • 1/2 cup sourdough starter unfed or discard
  • 2 cups all-purpose flour or a mix with semolina
  • 2 eggs large
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions
 

  • In a large bowl, create a well in the flour and add the sourdough starter, eggs, olive oil, and salt.
  • Gradually mix the flour into the wet ingredients using a fork until a rough dough forms.
  • Knead the dough for about 8-10 minutes until smooth and elastic.
  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.
  • Roll out the dough using a pasta machine or rolling pin to desired thickness.
  • Cut into desired pasta shapes such as fettuccine, spaghetti, or ravioli.
  • Boil in salted water for 2-3 minutes until the pasta floats.

Notes

This dough works well for different pasta types, including lasagna sheets and ravioli. Feel free to experiment with herbs like basil or rosemary for extra flavor.
