Authentic Mexican Chicken Tacos

  • 2 boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 cup chicken broth
  • 1 tbsp lime juice
  • 6 small corn tortillas
  • 1/2 cup crumbled queso fresco (or cotija cheese)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a bowl, rub chicken breasts with olive oil, salt, pepper, paprika, chili powder, garlic powder, onion powder, and cumin.
  2. Heat a skillet over medium heat. Add the seasoned chicken and cook for 4–5 minutes per side. Pour in chicken broth and lime juice; cover and simmer for another 5–7 minutes until chicken is cooked through and tender. Remove from heat and shred or slice.
  3. Warm corn tortillas in a dry skillet or directly over a flame until soft and slightly charred.
  4. Fill each tortilla with the juicy chicken. Top with crumbled queso fresco and chopped cilantro. Squeeze fresh lime juice on top.
  5. Serve immediately with extra lime wedges on the side.

Notes

Use fresh ingredients for the best flavor. Let the chicken marinate in the spices for deeper flavors. For a spicier taco, consider adding jalapeños or your choice of hot sauce.
