Berry Oatmeal Bars are the perfect snack or breakfast option that combines the goodness of oats with the sweet and tangy flavors of berries.

Ingredients

  • 2 cups rolled oats
  • 1 cup mixed berries (fresh or frozen)
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond butter or peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
  2. In a mixing bowl, combine the rolled oats, baking soda, and salt.
  3. In another bowl, mix the almond butter, honey, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until well combined.
  5. Gently fold in the mixed berries.
  6. Pour the mixture into the prepared baking pan and spread it evenly. Bake for 25-30 minutes until golden brown.
  7. Let it cool in the pan for 10 minutes, then cut into squares and serve.

Notes

Use old-fashioned rolled oats for the best texture. Bake for a shorter time for softer bars. Store in an airtight container for up to a week.
