Blackberry Balsamic Grilled Cheese Bliss

A delightful twist on classic grilled cheese, featuring sweet blackberries and tangy balsamic vinegar for a unique flavor burst in every bite.

  • 4 slices sturdy bread (sourdough or country bread)
  • 2 tablespoons unsalted butter, softened
  • 4 ounces brie, sliced (or 1 cup shredded sharp white cheddar or fontina)
  • 1 cup blackberries (fresh or frozen, thawed and drained)
  • 1 tablespoon balsamic vinegar (or 2 teaspoons balsamic glaze)
  • 1–2 teaspoons honey or sugar (to taste)
  • Pinch of salt and black pepper
  • Optional: 4–6 fresh basil leaves or 1 teaspoon fresh thyme
  • Optional: pinch of red pepper flakes

Instructions

  1. Make the compote: In a small pan over medium heat, add blackberries, balsamic, honey (or sugar), a pinch of salt, and black pepper. Cook for 4–6 minutes, stirring and lightly mashing until thick and glossy. Remove from heat and cool for 2–3 minutes.
  2. Prep the bread: Spread butter on one side of each bread slice.
  3. Layer the fillings: Place two slices, buttered-side down, on a cool plate or board. Add a layer of cheese, 2–3 tablespoons of compote, herbs if using, then another layer of cheese. Top with the remaining bread, buttered-side up.
  4. Grill: Heat a nonstick or cast-iron skillet over medium-low. Add the sandwiches. Cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted. Cover the pan for the last minute to aid melting.
  5. Rest and serve: Let the sandwiches rest for 1 minute, then slice and serve warm.

Notes

Best served fresh. The blackberry-balsamic compote can be stored in the fridge for up to 1 week or frozen for up to 2 months.
