Brie and Blackberry Puff Pastry Swirls

Impressive yet easy appetizer combining creamy brie, sweet blackberries, and honey in flaky puff pastry.

  • 1 sheet puff pastry, thawed
  • 1/2 cup blackberries (fresh or thawed from frozen)
  • 1/4 cup honey
  • 1 sprig rosemary, chopped
  • 6 oz brie, rind removed and cut into chunks
  • 1 egg, beaten (for egg wash)
  • Optional garnish: raw sugar or extra rosemary

Instructions

  1. Let the puff pastry thaw. Place the brie in the freezer for 30 minutes to ease cutting.
  2. Preheat your oven to 375°F (190°C). In a saucepan, combine the honey, blackberries, and chopped rosemary. Heat over medium until it simmers and gently mash the blackberries. Set aside.
  3. Roll out the puff pastry and spread the blackberry mixture evenly, leaving a border. Scatter brie chunks over the layer.
  4. Roll the pastry into a tight log and freeze for 15 minutes.
  5. Slice the log into 10-12 rounds and arrange on a parchment-lined baking sheet.
  6. Brush each slice with beaten egg and sprinkle with additional garnish if desired. Bake for 15-18 minutes until golden brown. Let cool slightly before serving.

Notes

For even cooking, roll the puff pastry evenly. Keep brie slightly chilled for better handling. Frozen blackberries should be drained before using.
