Chicken & Pesto Panini

A warm, crisp panini filled with tender grilled chicken, fresh basil pesto, and gooey melted cheese, perfect for lunch or a casual dinner.

Ingredients

  • 2 slices of ciabatta or panini bread
  • 1 grilled chicken breast, sliced
  • 2 tablespoons of basil pesto
  • 1 slice of mozzarella cheese
  • Fresh spinach or arugula (optional)
  • Olive oil for grilling

Instructions

  1. Preheat your panini press or a skillet over medium heat.
  2. Spread basil pesto on one side of each slice of bread.
  3. Layer the sliced chicken breast on one slice, followed by mozzarella cheese and spinach or arugula if using.
  4. Place the other slice of bread on top, pesto side down.
  5. Brush the outside of the panini with olive oil.
  6. Grill in the panini press for about 3-5 minutes, or until golden brown and the cheese melts. If using a skillet, press down with a spatula while grilling for an even cook.

Notes

For the crispiest panini, ensure your grill or skillet is adequately heated before placing the sandwich. A heavy skillet can act like a panini press if you don’t have one handy.
