  • 4 cups vegetable broth

Instructions

  1. Start by heating the olive oil in a large pot over medium heat.
  2. Add the chopped onions and cook until soft.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced potatoes and chickpeas to the pot, stirring well.
  5. Pour in the vegetable broth and bring everything to a boil.
  6. Reduce the heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  7. Season with salt, pepper, and any additional spices to your preference.
  8. Optional: Blend part of the soup for a creamier texture.
