Date & Walnut Tea Cake

A moist and tender cake combining the natural sweetness of dates and the rich flavor of walnuts, perfect for cozy afternoons and intimate gatherings.

  • 1 cup pitted dates, chopped
  • 1 cup chopped walnuts
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  6. Fold in the chopped dates and walnuts.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before slicing. Enjoy with a cup of tea!

Notes

For enhanced flavor, soak chopped dates in warm water for 10 minutes. Serve warm with whipped cream or powdered sugar.
