Easy Pasta Salad

A vibrant and refreshing pasta salad, perfect for gatherings, picnics, or quick meals.

Ingredients

  • 12 oz short pasta (like rotini, penne, or farfalle)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, chopped
  • 1 cup cucumbers, diced
  • 1/2 red onion, chopped
  • 1 cup feta or mozzarella cheese, cubed
  • 1/2 cup vinaigrette or Italian dressing
  • Salt and pepper, to taste
  • 1 tsp Italian herbs

Instructions

  1. Boil a pot of water and cook the pasta according to package directions until al dente.
  2. Drain the pasta, rinse it under cold water to cool, and set aside.
  3. Chop the vegetables into bite-sized pieces, including tomatoes, bell peppers, and cucumbers.
  4. In a large bowl, combine the cooled pasta, chopped vegetables, and cheese.
  5. Drizzle the dressing over the pasta mixture and toss gently to coat everything evenly.
  6. Cover the bowl and let it chill in the refrigerator for at least 15 minutes before serving.
  7. Just before serving, sprinkle with seasonings and give it another toss for the best flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
