Fluffy Brown Sugar Banana Pancakes

Delightful banana pancakes with a hint of brown sugar, perfect for breakfast or brunch.

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk (or milk with a splash of vinegar)
  • 1 large egg
  • 2 ripe bananas, mashed
  • 2 tablespoons melted butter
  • Cooking spray or oil for frying

Instructions

  1. Combine the flour, brown sugar, baking powder, baking soda, and salt in a large bowl. Mix well.
  2. Whisk together the buttermilk, egg, mashed bananas, and melted butter in another bowl.
  3. Pour the wet ingredients into the dry ingredients, stirring until just combined. Don’t overmix; some lumps are okay.
  4. Heat a skillet over medium heat, and spray with cooking oil.
  5. Pour about 1/4 cup of pancake batter for each pancake onto the skillet.
  6. Cook for 2-3 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  7. Serve warm with maple syrup, fresh fruit, or extra banana slices on top for added joy.

Notes

Make sure not to overmix the batter to keep your pancakes fluffy. If the batter is too thick, you can add a splash of milk.
