Garlic Butter Grilled Corn

Juicy, smoky corn on the grill with rich garlic butter and fresh herbs.

  • 6 ears fresh corn on the cob, husked and silk removed
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, finely minced
  • 1–2 tablespoons fresh parsley or cilantro, chopped
  • 1 teaspoon lemon or lime zest
  • 1 tablespoon lemon or lime juice (optional, for serving)
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika or chili powder (optional, for heat)
  • 1 teaspoon olive oil (light brush for the grill and corn)

Instructions

  1. Preheat the grill to medium-high heat (about 400–450°F). Clean and oil the grates.
  2. Make the garlic butter by mixing softened butter, minced garlic, parsley, lemon zest, salt, pepper, and smoked paprika in a bowl.
  3. Pat corn dry and lightly brush the ears with olive oil to prevent sticking.
  4. Place corn on the grill, cooking and turning every 2–3 minutes for even charring.
  5. Brush corn with garlic butter after the first turn and continue turning while grilling.
  6. Grill for 10–12 minutes total, until kernels are tender and lightly charred.
  7. Remove from the grill, brush with remaining garlic butter, and add lemon juice, extra herbs, and Parmesan if desired. Serve hot.

Notes

For dairy-free, substitute with vegan butter or olive oil. Grill in husk for juicier corn.
