Garlic Grilled Shrimp Skewers

Juicy shrimp drenched in a garlic-lemon marinade, grilled to perfection for a quick and flavorful dish.

  • 1 1/2 pounds large shrimp (1620 count), peeled and deveined, tails on
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon smoked or sweet paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (plus more for garnish)
  • Lemon wedges, for serving
  • Metal skewers or wooden skewers (soak wooden skewers in water 20–30 minutes)

Instructions

  1. Whisk together olive oil, garlic, lemon zest, lemon juice, paprika, red pepper flakes (if using), salt, and black pepper in a bowl.
  2. Pat shrimp dry. Add to the bowl and toss to coat. Marinate for 15–20 minutes.
  3. Soak wooden skewers in water for 20–30 minutes if using. Preheat the grill to medium-high heat (about 400–450°F / 205–230°C).
  4. Thread shrimp onto skewers in a “C” shape, packing them snugly but not tight. Lightly oil the grill grates.
  5. Place skewers on the hot grill. Cook until the bottoms turn pink with light char, about 2–3 minutes.
  6. Flip and grill 1–2 minutes more, until shrimp are opaque and just firm.
  7. Transfer to a plate, sprinkle with parsley, add a fresh squeeze of lemon, and serve hot with extra lemon wedges.

Notes

For a spicier kick, add red pepper flakes. This recipe is easily scalable for larger gatherings.
