Healthy Strawberry Shortcake

A light and fruity dessert made with fresh strawberries and a fluffy cake, perfect for warm weather.

Ingredients

  • 2 cups fresh strawberries, sliced
  • 1/4 cup honey or maple syrup
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Whipped coconut cream or whipped yogurt for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix sliced strawberries with honey (or maple syrup) and set aside to let them macerate.
  3. In another bowl, combine whole wheat flour, baking powder, and salt.
  4. In a separate bowl, whisk together Greek yogurt, almond milk, melted coconut oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Pour the batter into a greased baking dish and bake for 20-25 minutes, or until golden and a toothpick inserted comes out clean.
  7. Allow cooling before slicing and serving with the macerated strawberries and whipped topping.

Notes

Do not over-mix the batter to keep the cake light and fluffy. Store in an airtight container in the fridge for 2-3 days.
