Irresistible Chicken Fried Rice

A quick and tasty chicken fried rice recipe that combines tender chicken, colorful vegetables, and flavorful rice in one pan.

  • 2 cups cooked rice (day-old works best)
  • 1 cup diced cooked chicken
  • 1 cup mixed vegetables (like peas, carrots, and bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large frying pan or wok over medium heat.
  2. Add the beaten eggs and scramble them until fully cooked, then remove and set aside.
  3. In the same pan, add another tablespoon of vegetable oil and diced chicken. Cook until heated through.
  4. Stir in the mixed vegetables and sauté for about 3-5 minutes until they are tender.
  5. Add the rice, soy sauce, scrambled eggs, and green onions to the pan. Mix well to combine.
  6. Cook for an additional 3-4 minutes, stirring frequently until everything is heated evenly.
  7. Season with salt and pepper to taste and serve warm.

Notes

Allow leftover rice to cool and store in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a pan with a splash of water or oil.
