Italian Ground Chicken Soup

A warm, hearty soup made with ground chicken and fresh vegetables, packed with Italian flavors for a comforting meal.

  • 1 lb ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the veggies start to soften.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the ground chicken to the pot. Cook until it’s browned, breaking it up with a spoon.
  5. Pour in the diced tomatoes and chicken broth. Stir in the dried Italian herbs, salt, and pepper.
  6. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  7. Taste and adjust the seasoning if needed. Serve hot, garnished with fresh basil if desired.

Notes

For variations, consider adding other vegetables like zucchini or spinach. This soup is also freezer-friendly for up to 3 months.
