These juicy grilled shrimp skewers are quick, bright, and full of smoky flavor. Perfect for weeknights or party appetizers.

Ingredients

Scale
  • 1.5 pounds large shrimp (16/20 or 21/25 count), peeled and deveined, tails on
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (zest + 2 tablespoons juice)
  • 1 teaspoon smoked paprika (or sweet paprika)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon honey (or brown sugar)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Skewers (metal or wooden; soak wooden skewers 20–30 minutes)
  • Optional finish: 1 tablespoon melted butter and extra lemon wedges

Instructions

  1. Pat the shrimp dry with paper towels.
  2. Whisk olive oil, garlic, lemon zest, lemon juice, paprika, red pepper flakes, honey, salt, and black pepper in a bowl.
  3. Add shrimp to the bowl and toss to coat well. Marinate for 15–30 minutes in the fridge.
  4. Preheat grill or grill pan to medium-high heat (about 400–450°F) and oil the grates.
  5. Thread shrimp onto skewers, curling each into a “C” shape.
  6. Grill shrimp 2–3 minutes per side, until opaque and lightly charred.
  7. Remove to a plate, brush with melted butter if using, and sprinkle with parsley. Serve with lemon wedges.

Notes

Do not over-marinate shrimp. Use two skewers per row to prevent shrimp from spinning.
