Lemon Chia Breakfast Cookies

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup chia seeds
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil (melted)
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1 teaspoon baking powder
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, chia seeds, baking powder, and salt.
  3. In a separate bowl, mix together the melted coconut oil, honey (or maple syrup), lemon juice, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Using a spoon or cookie scoop, drop the dough onto the prepared baking sheet, forming cookie shapes.
  6. Bake for about 10-12 minutes or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. Microwave for 10-15 seconds to enjoy warm.
