Lemon Protein Donuts

Delightful and nutritious Lemon Protein Donuts that are perfect for breakfast or a snack, packed with protein and fresh lemon flavor.

Ingredients

  • 1 cup almond flour
  • 1 scoop vanilla protein powder
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • Juice and zest of 1 lemon
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan.
  2. In a large bowl, combine the almond flour, protein powder, baking powder, and salt.
  3. In a separate bowl, mix the yogurt, eggs, honey, lemon juice, and lemon zest until smooth.
  4. Slowly add the wet mixture to the dry ingredients and stir until just combined.
  5. Pour the batter into the donut pan, filling each mold about halfway.
  6. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  7. Allow donuts to cool before removing them from the pan.

Notes

These donuts can be made dairy-free by substituting coconut yogurt and vegan by using flax eggs. They can also be flavored with lime instead of lemon.
