Low Calorie Pumpkin Bread

A moist and flavorful pumpkin bread that is low in calories, perfect for fall gatherings or as a healthy snack.

  • 1 cup pumpkin puree
  • 1/2 cup applesauce
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon ginger

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the pumpkin puree, applesauce, honey or maple syrup, and eggs until well blended.
  3. In a separate bowl, mix together the whole wheat flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool for a few minutes before transferring to a wire rack.

Notes

Check freshness of baking powder and soda. Don’t overmix the ingredients and allow the bread to cool completely before transferring it.
