Low Calorie Pumpkin Bread

  • 1 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1/3 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine pumpkin puree, honey (or maple syrup), applesauce, vegetable oil, eggs, and vanilla extract. Mix well.
  3. In another bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before slicing and serving.

Notes

To keep fresh, store in an airtight container in the fridge for up to a week; freeze for up to three months.
