Mini Black Forest Cheesecakes

Delightful treats blending creamy cheesecake with rich chocolate and cherries, perfect for gatherings or a sweet indulgence.

Ingredients

  • 1 cup chocolate cookie crumbs
  • 4 tablespoons melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 jar of cherries (or cherry pie filling)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the chocolate cookie crumbs with melted butter until combined.
  3. Press the mixture into the bottom of mini cheesecake pans or muffin tins to form a crust.
  4. In another bowl, beat the cream cheese until smooth. Add in the powdered sugar and vanilla, mixing until well blended.
  5. Gently fold in the whipped cream until light and fluffy.
  6. Spoon the cheesecake filling onto the crust in each mini pan.
  7. Bake for about 15 minutes, then let them cool before refrigerating for at least 4 hours.
  8. Top each cheesecake with cherries before serving.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Best served cold.
