Mini Black Forest Cheesecakes

Delicious individual cheesecakes combining chocolate, cherries, and cream, perfect for any occasion.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup cocoa powder
  • 12 Oreo cookies, crushed
  • 1 cup cherries (fresh or jarred)
  • Chocolate shavings or grated chocolate for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix crushed cookies with melted butter and press into the bottom of cupcake liners in a muffin tin.
  3. Bake for a few minutes until set, then let cool.
  4. Beat cream cheese, sugar, and vanilla extract in a mixing bowl until smooth.
  5. Whip heavy cream to stiff peaks and fold into cream cheese mixture.
  6. Layer cheesecake filling over cooled crust and top with cherries.
  7. Chill in the refrigerator for at least 2 hours before serving.

Notes

For a lighter version, use low-fat cream cheese or sugar substitutes. Gluten-free options are available using gluten-free cookies.
