Zesty Orange Chocolate Muffins with a Sweet Twist

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon grated orange zest
  • 1/2 cup chocolate chips
  • 1/2 cup fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, eggs, milk, orange zest, and orange juice until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Fold in the chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

Use freshly grated orange zest for the best flavor. Be careful not to overmix the batter for fluffy muffins!
