  • 1 large egg

  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  5. Drop spoonfuls of dough onto the prepared baking sheets and bake for 12-15 minutes, or until the edges are lightly golden.
  6. Allow cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.
  7. For the frosting, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
