  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 cup white chocolate chips
  • 1 cup crushed Oreo cookies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, sugar, brown sugar, and softened butter. Mix until smooth.
  3. Add the egg and vanilla extract to the mixture and stir until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  6. Fold in the white chocolate chips and crushed Oreo cookies.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Reheat in microwave for softening.
