Quick Strawberry Shortcake Cups

A delightful dessert combining fresh strawberries with whipped cream in charming individual cups, perfect for any occasion.

  • 2 cups fresh strawberries, sliced
  • 2 tablespoons sugar
  • 1 cup whipped cream (store-bought or homemade)
  • 4 cups sponge cake or ladyfinger biscuits
  • Mint leaves for garnish (optional)

Instructions

  1. Start by cleaning and slicing the fresh strawberries. Put them in a bowl and sprinkle sugar over them. Let them sit for about 10 minutes to release their juices.
  2. In another bowl, prepare your whipped cream by beating cold heavy cream until soft peaks form. If you’re using store-bought whipped cream, you can skip this step.
  3. Get your sponge cake or ladyfinger biscuits ready. If not already made, you can cut the sponge into bite-sized pieces.
  4. In serving cups, layer the sponge cake/biscuits at the bottom.
  5. Spoon some of the sliced strawberries along with their juices on top of the cake layer.
  6. Next, add a generous dollop of whipped cream over the strawberries.
  7. Repeat the layers until the cups are filled. Top with additional strawberries and a mint leaf for garnish before serving.

Notes

If using frozen strawberries, ensure they are thawed and excess liquid is drained. It’s best to assemble the cups just before serving to prevent sogginess.
