Rustic Garlic Rosemary Artisan Loaf

A comforting artisan loaf filled with roasted garlic and fresh rosemary, perfect for any occasion.

  • 1 head of garlic
  • 1-2 teaspoons olive oil (for roasting garlic)
  • Pinch of coarse salt
  • Ground pepper (to taste)
  • 1 1/2 cups room-temperature water (70°F)
  • 1 teaspoon active dry yeast
  • 3 cups all-purpose flour (plus extra for dusting)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 2 teaspoons fresh rosemary, finely chopped (plus extra for topping)
  • Roasted garlic, peeled and mashed
  • 1 tablespoon olive oil (for the dough)

Instructions

  1. Preheat your oven to 400°F. Slice the garlic head horizontally to expose the cloves, drizzle with olive oil, and sprinkle with salt and pepper. Wrap in foil and roast for 40 minutes on a baking sheet. Once cooled, squeeze out the garlic and set aside.
  2. In a small bowl, combine water and yeast. Let sit for 10-15 minutes until bubbly and foamy.
  3. In a large bowl, mix flour, oregano, salt, and rosemary. Pour in the yeast mixture, roasted garlic, and olive oil. Stir gently until just combined; the dough will be sticky.
  4. Cover the bowl with plastic wrap or a towel. Place in a warm area to rise for 8-10 hours or until doubled in size.
  5. Turn the dough out onto a floured surface and gently shape it into a ball. Place it seam-side up in a floured proofing basket or bowl. Dust with flour, cover, and refrigerate for 1 to 48 hours.
  6. Preheat your oven to 450°F with a Dutch oven or a heavy lidded pot inside. Carefully turn the dough onto a piece of parchment paper, seam-side down, and score the top. Transfer it to the hot Dutch oven, cover, and bake for 30 minutes. Remove the lid and bake for another 15-20 minutes until golden brown and crusty.
  7. Transfer the loaf to a wire rack and cool for an hour before slicing to enjoy a tender, flavorful crumb with a crisp crust.

Notes

Use fresh herbs for best flavor. Allow enough time for the dough to rise for a lighter texture. A pizza stone can be a good alternative to a Dutch oven.
