Sheet Pan Salmon and Bell Pepper

A wholesome meal featuring salmon and colorful bell peppers, perfect for busy days and effortless cleanup.

Ingredients

  • 4 salmon fillets
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: garlic powder, paprika, or fresh herbs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large sheet pan, place the sliced bell peppers and onion. Drizzle with olive oil, and season with salt and pepper. Toss to coat the vegetables.
  3. Make space on the sheet pan for the salmon fillets. Place the fillets on the pan and season with additional salt, pepper, and any optional seasonings.
  4. Roast in the oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  5. Serve hot and enjoy your healthy, colorful dinner!

Notes

For crispy edges on the salmon, use a cast-iron sheet pan. Store leftovers in an airtight container for 2-3 days.
