Slow-Cooked Lamb Shanks with Herb-Infused Gravy

  • 4 lamb shanks
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pan over medium-high heat. Season lamb shanks with salt and pepper, then brown them on all sides in the pan.
  2. Remove lamb shanks and set aside. In the same pan, add onions, carrots, and garlic, and sauté until softened.
  3. Stir in red wine, scraping up any brown bits from the pan, and let it simmer for a few minutes.
  4. Add beef broth, tomato paste, rosemary, and thyme.
  5. Return the lamb shanks to the pan.
  6. Transfer the mixture to a slow cooker and cook on low for 360-480 minutes, or until the meat is tender.
  7. Serve the lamb shanks with the herb-infused gravy.
