  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 cups beef broth
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Optional: chopped celery, bell peppers, or any other veggies you fancy!

Instructions

  1. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Transfer the browned beef to your slow cooker.
  3. Add chopped onion, carrots, potatoes, diced tomatoes, kidney beans, beef broth, garlic powder, salt, and pepper.
  4. Stir everything together until well mixed.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.

Notes

Feel free to spice things up by adding chili powder or hot sauce for a kick. This soup can be stored in the refrigerator for 3-4 days or frozen for longer storage.
