Snickerdoodle Bar Cookies

Delicious, soft, and chewy Snickerdoodle Bar Cookies with a sweet cinnamon sugar topping, perfect for any occasion.

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons cinnamon sugar (mix of cinnamon and sugar)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter and granulated sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, combine flour, cream of tartar, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Spread the mixture evenly in the prepared baking pan.
  7. Sprinkle cinnamon sugar over the top.
  8. Bake for 20–25 minutes, or until a toothpick comes out clean.
  9. Allow to cool before cutting into bars.

Notes

Store in an airtight container at room temperature for up to five days. Can be reheated in the microwave for a few seconds.
