Homemade Sourdough Garlic Bread

Delicious homemade sourdough garlic bread with a crispy crust and soft aromatic center, enhanced by roasted garlic and fresh herbs.

Ingredients

  • 120 grams all-purpose flour
  • 180 grams bread flour
  • 100 grams sourdough starter
  • 1 tablespoon olive oil
  • 15 grams salt
  • 3 bulbs roasted garlic (about 25-30 cloves)
  • 1-2 sprigs fresh rosemary (optional)
  • Room temperature filtered water

Instructions

  1. Preheat your oven to 400°F (200°C) for the roasted garlic.
  2. Cut the tops off the garlic heads to expose the cloves.
  3. Drizzle the garlic with olive oil.
  4. Wrap the garlic heads in foil and bake for 30 to 50 minutes.
  5. Mix warm water with the sourdough starter in a bowl.
  6. Add the flours and salt to the bowl and mix well.
  7. Rest the dough for about 30 minutes (autolyse).
  8. Stretch and fold the dough every 30 minutes for 2 hours during bulk fermentation.
  9. Shape the dough into a rectangle, fold the edges to the center.
  10. Let the dough rest for 15 to 30 minutes; then shape it for the second rise.
  11. Preheat your oven to 500°F and place your Dutch oven inside for 30 minutes.
  12. Score the dough surface before baking.
  13. Bake with lid on for 20 minutes, then remove the lid and bake at 475°F for another 25 minutes.
  14. Cool the bread on a wire rack.

Notes

Store in an airtight container for up to 3 days or freeze for up to 2 months.
