Sourdough Protein Waffles

Delicious and fluffy sourdough protein waffles that are perfect for breakfast and packed with protein.

Ingredients

  • 1 cup whole wheat flour (or oat flour for gluten-free)
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1/2 cup active sourdough starter (fed or discard)
  • 1 cup milk (or dairy-free alternative like almond milk)
  • 1 large egg
  • 1 tablespoon melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon chia or flax seeds (optional)
  • 1/4 cup chocolate chips or blueberries (optional)
  • 1/2 teaspoon nutmeg (optional)

Instructions

  1. Preheat your waffle iron and lightly grease it with cooking spray or melted butter.
  2. Mix the dry ingredients in a large mixing bowl until evenly combined.
  3. Combine the wet ingredients in a separate bowl and stir well.
  4. Blend the wet ingredients into the dry ingredients gently until just combined.
  5. Cook the batter according to the waffle iron’s instructions, about 3-5 minutes.
  6. Serve immediately with your favorite toppings.

Notes

Use an active sourdough starter for best texture. Adjust sweetness to preference and let the batter rest for 5-10 minutes for optimal results.
