  • 1 can of coconut milk
  • 4 cups of chicken broth
  • 2 stalks of lemongrass, smashed
  • 3-4 slices of fresh ginger
  • 3-4 kaffir lime leaves (optional)
  • 1 cup of mushrooms, sliced
  • 1 tablespoon of fish sauce
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. In a large pot over medium heat, combine coconut milk and chicken broth.
  2. Add the smashed lemongrass, ginger slices, and kaffir lime leaves. Let the mixture simmer for about 5 minutes to infuse the flavors.
  3. Next, add the sliced chicken and mushrooms into the pot. Cook until the chicken is fully cooked, about 10 minutes.
  4. Stir in the fish sauce and lime juice. Adjust the flavors according to your taste preferences.
