Instructions

  1. In a mixing bowl, combine pumpkin puree, nut butter, and maple syrup. Mix well.
  2. Add rolled oats, protein powder, cinnamon, nutmeg, and salt to the mixture. Stir until fully combined.
  3. Fold in any optional ingredients like chocolate chips or nuts.
  4. Using your hands, roll the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.

For a smoother texture, ensure your nut butter is well-stirred. Store in an airtight container in the fridge for up to a week or freeze for up to 3 months.
