Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup milk or milk alternative
  • 1/3 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 egg large

Optional Add-ins

  • 1 cup blueberries or chocolate chips, nuts, etc.

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the milk, vegetable oil (or melted butter), vanilla extract, and egg until well combined.
  • Gently fold the wet ingredients into the dry ingredients, mixing just until combined. Do not overmix.
  • If using add-ins like blueberries or chocolate chips, fold them in gently at this stage.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
