Berry Yogurt Parfait

A bright and creamy parfait layered with yogurt, juicy berries, and crunchy granola for a fast, feel-good snack or breakfast.

Ingredients

  • 2 cups Greek yogurt (plain or vanilla)
  • 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1 to 1 1/2 cups granola
  • 1 to 3 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of fine salt (optional)
  • Lemon zest or a squeeze of lemon (optional)
  • Fresh mint, for garnish (optional)

Instructions

  1. Rinse and pat dry the berries. Slice large strawberries. If desired, toss berries with a little honey and lemon to lightly macerate.
  2. In a bowl, stir yogurt with vanilla, a pinch of salt, and sweetener to taste until smooth and creamy.
  3. Set out clear glasses or jars. Gather granola and any toppings (mint, zest, seeds).
  4. Spoon a layer of yogurt into each glass. Add a layer of berries, then a layer of granola.
  5. Repeat the layers. Finish with a dollop of yogurt and a few berries on top. Drizzle with honey if you like.
  6. Optional crunch boost: Toast granola on a sheet pan at 325°F (165°C) for 8-10 minutes until crisp and fragrant. Cool fully before layering.
  7. Garnish with lemon zest and mint. Serve right away for max crunch, or chill for 10-20 minutes for a cool, set parfait.

Notes

Use thick yogurt for clean layers and to avoid runny cups. Add granola just before serving to keep it crunchy.
